For a two-days journey by train, I would carry food items which are packed and wouldn't spoil fast, which include chips, biscuits and roasted peanuts, canned food items (such as beans), other processed food items ( bread and jam) and dried fruits.
Out of these, bread and jam should be consumed first, as it has a lower expiration date among the rest items.
The major reason for these particular food items is because they have the least accessibility for microorganisms and they inhibit the growth of microbes for a comparatively longer period.
