Water can absorb an enormous amount of heat but there is not much change in its temperature. During the day, water bodies absorb enormous amounts of heat making the earth surface fairly cool. At night the water bodies release vast amounts of heat that they had absorbed during the day, which along with other atmospheric effects, keep most of the surface from freezing at night. As there is more water on Earth's surface a balance is maintained which is very significant in survival of living organisms.
